Anzac cookies

Anzac cookies are an Australian classic. But the original recipe is loaded with sugar and saturated fats. I have adapted my own recipe which tastes pretty darn good and filled with fibre. This recipe is also quick to make and quick to bake and goes perfectly with a cup of earl grey tea!!


Anzac Cookies


Prep time: 5 mins Bake time: 10-12 mins Skill level: easy peasy


Ingredients:


Dry ingredients

1 cup of fine rolled oats

1 cup of desiccated coconut

¼ cup tapioca flour

¼ cup cassava flour

1 tsp of baking powder

1 tsp of cinnamon


Wet ingredients

1 egg

80 ml/g of maple syrup or honey

70 g of coconut oil/ butter


Method

- Line a baking tray with baking paper and heat oven to 180 degrees

- Combine all dry ingredients in a bowl and mix well

- Add wet ingredients to dry ingredients and stir well (cookie mixture should be moist but still able to form a cookie)

- Place spoon full’s of cookie dough on tray making sure there is adequate spacing between dough mounds.

- Press down dough with a fork to create pretty pattern

- Bake for 10-12 mins or until golden brown

- Best served with a cup of earl grey tea
