Chocolate Bean Cake

Alright i know it sounds super cooked and a little weird but yes indeed this is a recipe for a chocolate bean cake. This cake is Gluten, Dairy, Nut and refined sugar free and tastes just as good as a regular chocolate cake. The secret is in the beans haha

This Cake is packed with protein and nutrients to sustain you through meal times. Plus its a super duper easy one to make!






Chocolate Bean Cake


Prep time: 5 mins Bake time: 20mins Skill level: easy peasy


Ingredients

75ml of melted coconut oil

400g of tinned red kidney beans or butter beans

100g of rice flour

100g of cocoa powder

1 1/2 teaspoons of baking powder

100g of maple syrup/honey

3 fresh eggs

1 teaspoon of vanilla extract


Method

1) Preheat oven to 180 degrees and line a baking tin with baking paper

2) Place all of the ingredients into a food processor and blend until smooth batter forms

3) Spoon mixture into baking tin and spread mixture evenly

4) Bake for 20- 25 mins or until a skewer comes out clean. Leave cake to cool for 10 minutes
