Gluten free scones


So it’s been forever since I have had a scone, mainly because its virtually impossible to find gluten free scones and secondly because they are made from refined carbohydrates which lack fibre and wholesomeness. So here is a little recipe I put together and these scones are pretty darn good if I do say so myself




Gluten free scones

Make time: 10 minutes Bake time: 15-20 minutes Skill level : Easy



Dry Ingredients

100g almond meal

50g macadamia meal

75g of tapioca flour

100g cassava flour

2 tsp of baking powder

½ cup of raisons

Wet ingredients

80g of either butter or coconut oil

¼ cup of almond milk

1 egg

1 teaspoon of vanilla

Method

- Heat oven to 180 degrees and line a baking tray

- Combine all dry ingredients in a bowl

- Rub the butter/ coconut oil into the flour mixture until mixture resembles bread crumbs

- Mix and add 1 egg and milk (don’t need to worry about over mixing)

- Add raisins then roll into balls and press down onto baking tray with a fork

- Bake for 10- 15 minutes or till golden brown


Notes

Scones will turn out a little denser than a conventional scone but will resemble the texture of a cake/ rock cake

Best served with jam/ fruit and cream or yoghurt alternative
